1 medium banana
30g flour of your choice
3 tablespoons of liquid egg white
2-3 tablespoons of milk
Cacao powder or cocoa powder
Greek yoghurt
Berries of your choice
Oil spray eg rapeseed oil to cook
Mash the banana with the egg white in a bowl (or blitz the ingredients in a blender).
Stir in the flour.
Add cacao or cocoa according to taste - 2-3 teaspoons or more for a more intense flavour.
Add 2 tablespoons of milk and mix it in well. Add another if the mixture is still dry.
Heat a non stick pan spritzed with cooking oil.
When the pan is hot, pour the mixture into the centre of the pan (it will be a thick mixture - you might need to scrape it out of the bowl!) Gently distribute the mixture around the pan with the back of a spoon.
Cook over a medium heat until the pancake is setting then gently turn to cook the other side.
Turn out onto a plate and add a generous dollop of greek yoghurt and a couple of handfuls of berries.
I used liquid egg white to increase the protein content but you could just use whole egg and you could use plain or self raising flour, white, wholemeal or a mixture.
This makes a lovely weekend breakfast!
